A bottle of Barolo will have you lingering luxuriously at the table well after the meal has finished and it will reward you wonderfully if you wait a few years to uncork it.

A single sip and you’ll find yourself transported to the misty hills of Piedmont, wandering vineyards heavy with the Nebbiolo grapes that give the wine its unique character. Whether enjoyed alongside a simple selection of cheeses and a bowl of roasted hazelnuts, or paired with a decadent dinner of mushroom risotto or tagliatelle al ragu, Barolo is the star of any spread, thanks to its high acidity and strong structure.

HARVEST

The harvest for Barolo takes place in October. Following tradition and to safeguard quality, our Nebbiolo grapes are hand-harvested with the utmost care in the morning and delivered within just a few hours to the winery to be crushed.

VINIFICATION

After harvesting, the grapes undergo destemming and gentle crushing, followed by fermentation in stainless steel tanks at a controlled temperature of 82°F. The must remains in contact with the skins for 35-40 days to extract color, aromas, tannins, and polyphenols. After racking, the winery creates the ideal conditions for malolactic fermentation, which balances the wine and adds complexity.

AGING

After the crush, our wine matures in small French barrels for 38 months before being bottled and aged an additional 6 months. Every step of the process is meticulously managed, respecting tradition while utilizing modern methodologies.

TASTING NOTES

Color: Garnet red shimmering with brick-orange.
Aroma: A beautiful bouquet brimming with floral notes of rose and violet, complemented by ripe red fruit, spices, tobacco, and a delicate hint of licorice.
Taste: Its strong structure blends seamlessly with well-integrated tannins, offering an intense and persistent experience that evolves over time, revealing nuances with each sip.
Food Pairings: Beef, lamb, game meats, stews, mushrooms, and aged cheeses.
